Super Broccoli Salad, inspired by a recipe from Trader Joe's

 

This is a nutritious and simple salad that tastes delicious. It has proved popular for everyday and for holiday dinners. It is easy to double when necessary. Goes well with turkey, ham, and Chinese food. One recipe serves about six generously.

 

Salad Ingredients

 

  • 1 bag Trader Joe's Fresh Broccoli Florets ( about 10 oz.), chopped, or use any fresh broccoli. I use about one bunch or three or four crowns. I also chop the stems into pieces the size of a large vitamin capsule.)

 

  • 1 cup Trader Joe's Golden Berry Blend. (You can substitute a mixture of dried cherries, cranberries, and golden raisins, in a pinch.)
  • 1 cup Dry Toasted Slivered Almonds. Trader Joe's are very convenient.
  • 1/4 cup red onion, chopped. (Optional)

 

Dressing Ingredients

 

2 Tbsp each mayo, honey, cider vinegar, and olive oil.

 

Chop the broccoli. Mix it in a large bowl with Golden Berry Blend, almonds, and red onion. In a smaller bowl or measuring cup, thoroughly mix the mayo and honey. Add the vinegar and olive oil and mix well. (I use a wire whip, and sometimes I have to heat the honey a bit first in the microwave if it's turned solid on me.)

 

Pour dressing over broccoli mixture, toss well so dressing coats everything, and refrigerate one or two hours for best results. Delicious!
