Guacamole
When avocados are good & abundant, & yet you don’t want too many calories, its time for this guac spread.
*One or two ripe Avacados diced large.
*medium onion diced small.
*2 or 3 medium stalks of celery, not the outside ones, diced
*4 garlic bulbs minced
*2 small cans of mild green chilies diced & the juice from the can. (use whole chilies & dice them rather than pre-chopped chilies, which tend to have tougher skins).
*2 heaping tablespoons of Nutritional yeast
*Liberal amount to Chipotle hot sauce
Some other hot sauces like Murphys African Rub, to taste.
Great on a chips, great on hot caggage. Lasts for days if kept cool.
