Barb's Favorite Casserole

 

This has been a favorite at our house for years and has been popular with all ages. I often serve it at our Slava, and teens in my family have requested it for birthday dinners. It can be made ahead and stored in the refrigerator until you want to cook it. It offers six generous servings.

 

Ingredients

 

  • 4 cups (1/2 pound) noodles
  • 1 T butter or olive oil
  • 1 pound ground chuck or turkey
  • 2 8-oz cans (or one 15-oz can) tomato sauce
  • 1 8-oz package soft cream cheese
  • 1/4 cup sour cream
  • 1/3 cup minced green onion
  • 1/2 medium green pepper, minced
  • 2 T. melted butter or oil
  • 1/2 pound cottage cheese (I use non-fat and it works fine)

 

 

Cook the noodles according to package directions and drain. Meanwhile, brown meat in skillet. Drain off the fat. Stir in the tomato sauce and remove from heat. In a bowl, combine the cottage cheese, cream cheese, sour cream, onions and green peppers. Spead half the noodles in a shallow 2-qt casserole. Cover with the cheese mixture. Cover with the rest of the noodles and pour the melted butter or oil over the noodles. Spead the tomato/meat sauce on top. Chill if you want to cook it later. About an hour before serving, preheat oven to 375 degrees. Bake for 45 minutes. Good served with with green salad and garlic bread.
